Today started my third week back in the gym. Yay for me! Believe me, this isn't easy. I haven't worked out in several years, and I spent the last fifteen months pretty much being a couch-slug. I did accomplish a few major goals in that time - I quit smoking, got off all my meds (including the xanax that became a bad relationship) and gave up the liter of vodka I drank every day. It's amazing how beautiful everyday life is when your mind is clear and sharp! Thank you Jesus! And I can honestly say that if you have faith and pray --be ready, God will take control! But, during that process, I also allowed myself to gain twenty pounds!! And I was already twenty pounds heavier than I was in 2002...back when I was in shape. BUT NO MORE! Now I eat clean and exercise daily ( except Sunday). Monday, Wednesday and Friday are my favorites. I have a standing date with each weight machine in the gym. Tuesday, Thursday and Saturday are all cardio days (sigh). I read somewhere that "Sweat is just fat crying". Well, let me tell you, my fat is squalling on those days!! But every night, I sleep through the night and the next day finds me waking up without an alarm clock. The weight is SLOWLY coming off (I didn't go on a diet, I changed my lifestyle completely) and I can see changes in my body already. I've got a long way to go, but I know now that nothing can stop me if I stay focused and let the Lord lead. I've set a goal to be fit enough this October to do a Warrior Dash in Louisiana - at 50 years old. I may be the last one across the line, but it will be the achievement of conquering demons and devils that will mean the most. I don't know if I'll ever again be able to walk ten miles in two hours , or do yoga poses that would frighten most people , but I will be in the best shape I can be and I look forward to all this bright and wonderful future holds!
This morning, I was craving something other than oatmeal and eggs when I got back, and since I keep chopped, frozen veggies on hand, this seemed liked a good idea...it was!
Clean Sweet Potato Scramble
serves 1
This is so easy...just heat up a teaspoon or two of coconut oil and add
- one handful of frozen, chopped onions and peppers
- one handful of frozen, chopped sweet potatoes
- one handful of frozen, chopped mushrooms
season with
- no salt or lite salt
- freshly ground pepper
let that cook down for a few minutes, until the sweet potatoes are soft. You may want to cover the skillet with a lid for a little bit.
Then add
- one handful of turkey bacon bits
heat the mixture through, remove from heat, then sprinkle with
- 1 tablespoon of reduced fat cheese
That's it! Quick, easy and healthy!! Not to mention, delicious!
