Spicy Citrus Tomato Soup


(1) 10 0z. Can Petite Diced Tomatoes with Green Chiles ( I prefer Red Gold instead of Rotel - less sodium)

4 oz fresh squeezed Orange Juice

1 tsp Ginger Root  

1 tsp freshly minced Garlic

8 oz filtered Water

2 tsp Olive Oil

¼ tsp Salt

½ tsp freshly cracked Black Pepper

1 tsp freshly chopped Basil

1 tsp dried Oregano


You can make this easy soup one of two ways.

One:
Put all ingredients except the orange juice in a saucepan, bring to boil, then simmer for 30 minutes on low heat.  Next, put the soup in the blender and pulverize the heck out of it! Add the orange juice and heat back through.

Or

Two:
Put all your ingredients in the Vita-Mix except the Orange juice.  Blend on high until steam begins to escape out of the small cap (around 5-7 minutes)  Add orange juice and blend for 2 minutes longer.





This is a wonderful soup for a cold.  It is light, but the spice is good for congestion and a sore throat.  For a light supper anytime, add garlic/cheese toast.  Perfect!
