Fun with the VitaMix!

I bought a VitaMix several months ago ( yeah, I know, New Year's Resolution thing).  I got it out Sunday and decided to make it part of my daily routine.  Oh, not the old routine, the NEW routine.  My own version of "The Biggest Loser".  In the last year, I've managed to put on a "few" pounds.  Well, it's no wonder.  I had double pneumonia which took two full rounds of steriods to clear up.  Then, I found that I wasn't able to walk or ride my bike where I was living...that is, if I wanted to go on living and I quit smoking all at the same time.

Since I moved to Anna Maria, I've been able to get back on the bike, but a bout with Plantar's Fascitis has sidelined the walking.  Needless to say, I've not done too well taking the weight off.

Until now.

Yesterday, I started back with Yoga, biking and added Zumba, along with really counting the calories.  Loving the exercise ( although today is a "slow" day for me...I have Chronic Fatigue Syndrome to top it all off!), but I'm wishing I had the metabolism I had ten years ago! ( Don't we all???)

So I came up with a couple of recipes that taste great and won't kill the diet.  I'll add more as I go along the journey. Wish me luck!
