Easy Chili
- 1 pound very lean ground beef or turkey
- 6 tablespoons minced garlic
- 2 teaspoons each salt and pepper
- 2 cups frozen chopped onions and peppers
- 2 tablespoons each cumin and oregano
- 5-6 tablespoons chili powder
- 2 tablespoons Crystal hot sauce
- 4 cans Rotel tomatoes
- 4 cups kidney beans
- 22 ounces Spicy Hot v8 Juice
- Place ground beef, garlic, onions and peppers in large skillet or a dutch oven and brown beef. Do not thaw peppers and onions. They will give off just enough liquid to prevent sticking.
- When your meat is browned, add cumin, oregano, chili powder and hot sauce.
- When that is thoroughly mixed, add tomatoes , beans and v8 juice. Let that cook about five minutes, then taste and adjust seasonings.
- Let simmer on low heat for 20 - 30 minutes and serve.
Top with plain greek yogurt, shredded cheese and chopped green onions.
Hint - This chili freezes well. Also, you can substitute regular V8 juice and/or regular chopped tomatoes if spicy food doesn't like you!
This recipe makes 8 large servings. Feel free to halve or quarter the recipe. ( That's what I do) I use dried kidney beans and cook them ahead of time, but canned is fine, just rinse them first. And as for the V8, it's one small, individual can per quarter pound of meat. As always, the seasonings are a matter of taste. I like my food full of flavor, but if you don't feel the same, simply use a little less.
